Sustainability concept

As an ecologically oriented company, nature is particularly close to our hearts. We take our responsibility for our environment very seriously and strive to maintain our high standards in all areas and to achieve continuous improvements in order to maintain a livable and healthy environment for future generations. It is very important to us to actively involve our guests in the environmental measures and ecological values we have set and to bring them closer to the importance of environmental protection. Our actions pursue the goal of consciously living, continuously continuing and improving environmental protection and sustainability.

In order to communicate our values and contributions in this regard more strongly to the outside world, we have committed ourselves to meeting the requirements of the Austrian Ecolabel for gastronomy and accommodation establishments as well as for green meetings/green events.

This eco-label gives consumers, both public and private buyers, the opportunity to more easily identify environmentally friendly products whose quality has been tested on the basis of state-approved criteria.

The environmental criteria on which the award of an Ecolabel is based are the result of scientific studies and extensive deliberations within the Ecolabel Committee. The members of this committee are the bodies responsible for the Ecolabel, representatives of environmental, consumer and industry associations, trade unions, as well as representatives of small and medium-sized enterprises (SMEs) and retailers.

On the basis of a comprehensive catalogue of criteria, we were assessed by an independent examination commission in the following areas: General Operational Management, Environmental Management, Energy, Water, Waste, Air, Noise, Office, Cleaning, Chemicals, Hygiene, Construction and Housing, Equipment, Food, Kitchen, Transport and Outdoor Areas. In addition to the mandatory principles and the associated must-have criteria, selectable target criteria are used to address the specific operating situation such as size, offer, equipment or location, and special features as well as above-average performance in the area of environment and sustainability are rewarded.

We are regional

We attach great importance to regional and seasonal products. In order to be able to offer quality at the highest level on the one hand and to make a valuable contribution to our environment on the other, we prefer to use regional organic products and adapt the composition of our dishes to the seasonal offer. That's why we only work with the best suppliers. You can find an excerpt of our partners in our current menu.

As with our food ingredients, we also attach great importance to Austrian tradition and quality in our wine selection. That's why you will find only Austrian wine specialties in our wine list. Austria's wines come from a centuries-old winemaking tradition and enjoy an international reputation.
